Summer meals?

Tell me what you make for summer dinners when you are too hot to cook. Recipes appreciated. And I am personally looking for meals with no white flour or pasta in them.
And before you post “pick up a salad at Wendys or Quiznos” we already know that routine quite well

Taco salad: taco meat, corn chips, grated cheddar, chopped tomato and green pepper, all in a half lettuce/half chopped cabbage salad. Catalina dressing, Salsa and sour cream on the side.Yum. I keep cooked burger in the freezer to make it even cooler.

Grilled veggies - zucchini, squash, sweet potatoes, eggplant, onions, mushrooms, etc. Many advantages. 1) We have no a/c, so by grilling I am not heating up the house and 2) by grilling outside I’m making markedly less dishes. Use a wrap, throw on some cheese (I like a little feta) or sprouts and a little lowfat Italian dressing and you’re done.
I also do a wild rice dish - use real wild rice (the kind that takes 50-60 minutes to cook!) - cook it, and saute some red onion (chopped) and sweet green pepper chopped (cubanelle or frying peppers)- grill some fresh pineapple on grill(spray a piece of foil with PAM, then put pineapple on it on low flame) - when the pineapple is done, cut it into small chunks, mix rice, onions, peppers and pineapples and a few tablespoons of olive oil and voila! It’s even better as leftovers.
At our farmers market we have someone who makes chicken sausage - garlic and sage, herb and sundried tomato, spinach and provolone - again, on the grill. Mmmm - fresh green salad, a small piece of wheat bread and it’s a meal!
I second Mary above - I always have either cooked taco chicken or beef in the freezer - when you’re hot, too busy, etc. just thaw and serve. Salads are great - again, either hard or soft tacos are easy and quick and fun for the kids.

I’ll cook salmon fillets (poached with lemon) in the morning on the stove, make a cucumber sauce and put it in the fridge.
Then at dinner, I serve it cold. It’s delicious!

Get some whole wheat pizza crusts…brush both sides with olive oil…throw them on the grill on low…turn the grilled side up onto a cookie sheet and put fresh delicious toppings….artichokes, cheeses, fresh tomatoes, basil, etc…then slap it on the grill for another 5 min and EAT UP baybee…grilled pizza is so delicious!
