Kym’s Summer Protein Salad Recipe

This is a great salad I eat while training. I make it in a big batch — and then have it on hand to snack on. This is a variation on greek salad — and very vinagery! If you aren’t into vinager — you probably wont like it!
Take a half cup of frozen peas, half a cup of edamame beans and half a cup of lima beans and nuke with some water for about 4-5 mins. Just enough to get them thawed. Rinse with cold water.
Add some shredded carrot (I use the matchbook from the produce isle)
Dice up a deseeded cuke
Dice up a few tomatos
Throw in some Feta Cheese
Add some bean sprouts if you have them. (this salad is all about textures!)
Add a can of lightly chopped artichoke hearts
Add 1/4 of white vinager
Add a few table spoons of rice vinager
Drizzle with olive oil
Salt and Pepper
Little bit of Dill
Toss
Best if it has a few hours to chill — but fine to eat right then too!
