I highly recommend Puff Pastery Crust for Turkey Pot Pies post Thanksgiving.

Put one puff pastery shell in the bottom of a deep dish pie pan. Bake for 25 mins. Set aside.

Saute some onion with olive oil till soft. Add in diced turkey and a box of Chicken Stock. Dump in frozen mixed veggies and what is left of the green beans from Thanksgiving. Add a table spoon of Chicken Base. Bring to a boil. Mix half a cup of milk with flour till its like rubber cement. Add to mixture and simmer till thick.

Spoon mixture into pie pan. Add top layer of puff pastery. Bake for 30 -35 mins till top is golden brown.

YUMMY!

I only had a bite. I’m down 18lbs for the year and I’m not blowing it on puff pastery. But *you all* enjoy!

My search for the illusive Cavalier Dream Puppy continues. Here’s what is going on. There is a neurological condition that can only be diagnosed by MRI. A dog can have it and be asymptomatic. The only way they are going to get it out of the breed, is to slowly start breeding only clear to clear. So, I believe in supporting the breeders who are breeding clear to clear.

However. The MRI is very expensive. So not many breeders are doing it. Also… since it looks like this problem is a recessive gene (or genes) then you can still get SM (the condition) even if you had two parents who were clear.

Sooooooo.. there are only a small number MRI’d dogs. Of course, there is no list of dogs who are grade A dogs. And no one is admitting if they have a grade D dog. Thing about the devastation that finding out a dog you have spent thousands of dollars on, done all the shows and finished their championship and then find out …oops… they have SM and can’t be bred! Many breeders would rather simply not test and be ignorant.

So, I’m searching. All over the country. And I’m sick of it. I just want a puppy. I’ve been at this for months now. And I’m no closer. The puppy we thought we were going to get the breeder decided to keep. Other clear to clear dog matings are not happening right now. Then, the fact I am looking for a “show” dog on top of all this complicates things even further. My “priorities” for a pet are different then my priorities for a show dog.

In other news… I ran 3 miles today and did hills. And it didn’t kill me. My Garmin wasn’t charged and actually I think I did much better not knowing how freaking slow I was going. I simply got out there in the rain and did it. I liked running listening to Christmas music. I feel really good that I am not feeling abnormally sore after my run today either. I feel sore but not like I did when I first started. The pain factor is the biggest thing that measures my success. It’s sure as hell not speed.

Purse party was great fun. I had a wonderful time and I got five free purses out of the deal. I ended up with like 28 people here. So it was full and wonderful. I made too much food!

A really great cookie/dessert/brunch item that was so easy was this recipe:

Almond Pastery Bar Cookie

Two cans of crescent rolls
1 stick of Butter
Cup of slivered almonds
1 -2 cups of Powdered sugar mixed with water to a “drizzle” consistency

Cook almonds in butter on stovetop till soft and slightly brown. (5-8 mins). Unroll crescent rolls and press into a 13×9 pan cutting it to fit. Use the left overs in another small pan. (I used a pie plate) Pinch seams together to form the crust. Dump the butter and almonds all over the crust splitting it between the two pans. Leave a ½ inch around the edge. Put in a 375 oven on the bottom rack and bake for approx 16 mins till the crust is brown on the bottom. Take out and cool. Drizzle with powdered sugar mixture. They can be served warm or cold.

My parents are coming for Christmas. That should be nice. I am now going to go out and buy the new table I have wanted. I want a table that I can entertain with and where I can use my big beautiful lazy Susan.

Nothing much else exciting going on. Friday starts the slew of half days. We have some friends we have invited for Thanksgiving, but I won’t be too disappointed if they can’t make it. Now that my parents are coming on Christmas, I don’t feel the burning desire to have a big production at Thanksgiving entertaining others.

You know when you cave in to your kids because you want them to feel all warm and fuzzy, but you know, in the dark recesses of your brain that what you are about to do is a very bad idea? Yeah. Well. That happened to me this morning.

And what was this horror you ask?

PANCAKES

My children love pancakes. But for Noah, pancakes are like crack. He loves them. All of them do really. Perhaps it’s the sticky gooey syrup. Perhaps it the carbohydrate goodness that can soothe and comfort. Perhaps it’s the sugar rush they get from it. I dunno. I do know I don’t make them too often. Why? Well now I remember.

First of all, it’s messy. I mean messy in a pancake batter dripped on my stove, eggs shells in my sink, double griddle pan dirty, Bisquick flour all over the counter kind of way. Sticky plates on the kitchen table, syrup drips on the table, crumpled napkins that have fallen on the floor kind of messy.

Second of all, it takes a lot of time to cook pancakes for four people. Although really, it’s just the comparison of popping the frozen ones into the microwave versus slaving over the hot stove that puts it into perspective. And as my kids point out.. the microwave ones do not taste near as delicious!

Thirdly, could I cook pancakes for just my kids and not partake of them myself? No, I think not. And pancakes make me feel all bloated and icky after I eat them. Cause of course I can’t just eat one. One would be ok, but 4… not so much!

Fourthly, and most importantly, they sugar up my kids. After they were done eating, without even missing a beat, they were playing chase in the house. As they ran up the stairs pulling down each other’s pants as a joke… I stopped them to explain that this was the very reason mommy doesn’t like to make pancakes. That they act like ANIMALS after they eat them. And perhaps, if they would like pancakes in the future, they needed to try in their little 7 year old brains, to exhibit a bit of self control.

Noah smiled.
Dinara said “sure mom.”
Emma said “you bet!”

And then, with impeccable self control, they walked up the stairs to their rooms to go get dressed. And I will admit, I surprised it was only 4 minutes before someone was screaming about someone being in their space, not keeping their hands to their selves.

And then a mere 30 minutes later… Dinara in a fit of uncontrollable glee, erased Noah’s 3 months of work Lego Star Wars game from the Game Cube. She doesn’t really understand what she did. Noah was inconsolable. He was angry not only at the loss, but at the fact that his sister couldn’t grasp the long term consequences of what she did by obliterating his game. So his pain felt completely invalidated. I suggested to him that perhaps we could copy Daddy’s game to his name, was not much comfort because he had gotten farther then Daddy. He just kept saying “I worked so hard on that game!”. His pain was palatable I tell ya.

And with the evil eye, he looked at me with a very serious look and then looked at his sister, contemplating the horror of what had just happened. And as he slowly turned back to me with his deep brown old soul eyes and he said with all seriousness “This is all because of the pancakes isn’t it?”

I didn’t say anything; I just gave him a hug while he cried.

If you have a Trader Joes by you… this is my favorite “easy” meal. I mean it tastes so good. It’s really Chicken Gyros but my kids call it Greek Tacos. Cause you know, if it has taco in the title, it’s got to be good. If you have ever eaten Chicken Pita Sandwiches from MiamiSubs on the east coast… this is as close to the recipe that you can get. And it’s so easy. The secret is really Trader Joe’s Tzatziki sauce. That why if you don’t have a Trader Joes… forget it. They’ve nailed the sauce. I’ve tried making with other Tzatziki sauces…and it just didn’t taste as good.

Thinly sliced tomatoes cut in half
Trader Joes Mediterranean Flatbread
Trader Joes Tzatziki Sauce
Crumbled Feta Cheese
Grilled frozen chicken strips (I use ones from Costco or I buy them at Trader Joes too.)

Microwave the chicken till warmed.
Heat flatbread in the microwave or on skillet till heated
Smooth on lots of Tzatziki sauce
Put the tomatoes and cheese on
Pile on the chicken

YUM YUM YUM! We serve it with saffron rice and tomato basalmic salad in the summer. Highly recommend lots of napkins.

Food Network, you inspire me and my family loves you for it! I watch you and I can’t help but try out all the wonderful dishes your cute cooks make look so easy.

I really can’t believe I now enjoy cooking so much. I guess it’s the luxury of time. I hated cooking when I worked. My nanny cooked for us… and it was so nice to come home to a prepared meal. But now that I am not working, I am becoming quite a master in the kitchen. And tonight was awesome. I made chicken breasts with roasted lemon and rosemary sauce. And I made a carrot and fennel salad with tangerines for our side dish. It came out so yummy. And I have never used fennel before. So it was great to use something new and have it taste amazing.

I love Olive Garden’s Pasta e Fagioli Soup! This is the receipe I use to recreate it in my own kitchen. I add extra beans and meat - skip the pasta… and like it thick. It freezes well!

1 pound ground beef
1 small onion, diced (1 cup)
1 large carrot, julienned (1 cup)
(I just buy the prepackaged ones in my produce area by BirdsEye)
3 stalks celery, chopped (1 cup)
2 cloves garlic, minced ( add lots more then this but I’m a garlic freak)
1 28 ounce can diced tomatoes
1 15-ounce can red kidney beans (with liquid)
1 15-ounce can great northern beans (with liquid)
2 15-ounce cans tomato sauce
2 cups of water
1 pinch of Cayenne Pepper to taste
1 tablespoon of Worcestershire Sauce
1 1/2 teaspoons salt
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 pound (1/2 pkg.) ditali pasta

1. Brown the ground beef in a large saucepan or pot over medium heat. Drain off most of the fat. I season my beef with garlic and garlic salt while cooking.
2. Add onion, carrot, celery and garlic and sauté for 10 minutes.
3. Add remaining ingredients, except pasta, and simmer for 1 hour. If soup is too thick, add water while simmering.
4. About 50 minutes into simmer time, cook the pasta in 1 1/2 to 2 quarts of boiling water over high heat. Cook for 10 minutes or just until pasta is al dente, or slightly tough. Drain.
5. Add the pasta to the large pot of soup. Simmer for 5-10 minutes and serve.

Ok.  Im getting ready to head to the beach but I had to ask you guys this question.   Do you work at “diversifying” your children’s foods?  Like…  do you try to make sure they eat a wide variety of fruits and veggies?   Do you shoot for not eating processed crap so much?   Do you have any tricks?

I think since my weightloss surgery, I’m more aware of all this stuff since I malabsorb certain vitamins and fats…  And to be perfectly honest I can “see” the difference when food exits my body.  I can tell what is processed and what wasn’t.   So…  I really try to feed my kids a variety.     I try to give them different colored foods too…     Does that make me weird?

Im just curious of other parents do the same thing or if they just assume that the multivitamin and fortified breads and cereals cover it all….
